~School Lunches~


This is not a typical day...but, once in awhile we like to have a really gourmet lunch. Since we homeschool, we have that option *U*


(disclaimer- many days it's PB&J sandwhiches with fruit!)


I like to eat a good spring mix salad with tomatoes, baby squash from the garden, toasted pecans, feta cheese (my own homemade when possible) and carrots, with maybe some bell peppers tossed in, drizzled liberally with my own salad dressing, which by the way, is very good for you.

2 parts good olive oil (I mean the good stuff) to 1 part raw apple cider vinegar
1/4 of a chunk of sweet onion or a purple one

3 or 4 cloves of raw garlic

a TB or Italian herbs if dried, or fresh just a bunch~toss in a hunk of good parm cheese if you like

salt & pepper

Blend until smooth and creamy

We had cornmeal mush for breakfast, so T. saved the left over, smoothed it flat and mixed it with rosemary, salt & pepper, and dried red chiles. After chilling, she cut it, dipped it in seasoned flour, and fried it in olive oil until golden brown and crisp on the outside, creamy on the inside. OOooooh! I love this stuff! Addictive.



T. also made Challah bread from scratch, including grinding the grain herself. I think we have covered home Ec!

  1. Looks mouthwatering. My kinda lunch for sure! I need to get the challah bread recipe, I remember when she made it before and it was so good!
